When people think about dieting or living a healthy lifestyle, everyone’s first thought is, I can’t eat that. I stopped restricting my life a long time ago. It is time that we change how we look at food; and not be afraid of it, but enjoying it in moderation.

 

 I am always looking at recreating my favorite recipes to fit my lifestyle. Every recipe can be transformed into a healthy version and enjoyed. I refuse to deny myself of anything I enjoy.  

 

Fried Rice is a recipe that my whole family enjoys, and I make it for them in many different ways. 

 

Change up your recipe and add:

 

  • Beef
  • Shrimp
  • Chicken

 

Or make it vegetarian. Make it without the protein, and don’t add the egg. Simply make it with the vegetables.

 

Meal prep your rice and take it to work or have it for dinner. Your rice will hold well in the fridge for up to 5 days.

Chicken Fried Rice

I love eating and making my favorite dishes to fit my healthy lifestyle is ideal. This dish can be made and store in the fridge for up to 5 days. It is a very versatile dish you can make it with chicken, shrimps, or steak.

Ingredients
  

  • 100 grams Basmati rice
  • 1/4 cup Carrots
  • 1/4 cup Frozen peas
  • 1 whole egg
  • 3 oz Chichen breast
  • 2 tbsp Low sodium soy sauce
  • Salt & Pepper to taste
  • Cooking spray

Instructions
 

  • Directions: Cooking rice according to package.  Cut chicken into small pieces & season to flavor. Heat a medium skillet, add cooking spray, add chicken and cook thoroughly. Remove chicken. In the same skillet add rice, carrots, & peas. Add salt, pepper, soy sauce and combine.  Push rice to one side of the skillet. Crack an egg on the side with no rice and scramble. Once cooked combine together with all mixture and add chicken and sesame seeds.  Enjoy!
