
You can never go wrong with tacos for dinner. Am I right? These fish tacos are so good it will be hard to just eat 1 serving.
I think that tacos is one of those recipes you can make with any protein you like. I have also made this recipe with shrimp and they are also so delicious as well. When it comes to making dinner at my house, I want something satisfying, delicious, and something that will not take me all night to make.
When you are low on time or friend and family show up at your door step without announcing, well making tacos will not only please everyone, but you can feed an army. All you would need is to chop a few items and cook a protein of your choice.
Creamy Adobo Dressing Fish tacos
These fish tacos are so easy to make and delicious. The creamy dressing with that hint of smoky adobo sauce is so good. You can make the marinade and dressing ahead of time and have it ready just in time for dinner.
- 4 oz Tilapia
- 3 Corn tortillas
- 1/4 cup Cilantro, chopped
- 2 tbsp Lemon juice
- 1 Tsp lemon zest
- 1 Tsp Honey
- 1 Clove of garlic, minced
- 1/2 Tsp Chili powder
- Salt & pepper to taste
- 1 container Plain greek yogurt
- 1 Tbsp adobo sauce
Directions: Dressing– in a bowl add plain greek yogurt, 1 tbsp. of adobo sauce
1 tbsp. of lemon juice, and salt pepper to taste. Marinade – In a bowl add 1 tbsp. of lemon juice, 1 tsp. of lemon zest, 1 tsp. of honey, 1 clove of garlic, minced,½ tsp. chili powder; add salt and pepper to taste.
Place fish in a zip lock bag and pour marinade, let sit for an hour in the fridge. (You can also let it marinade over night)
Heat a skillet on medium, coat with cooking spray. Remove fish from marinade, and cook on both side until golden brown. Assemble your tacos; add a piece of fish on tortillas, top with cabbage, cilantro, and drizzle with dressing.
