I love making my greek salads at home because I can add extra of whatever I want.I enjoy having fresh and roughly chopped salads that are easy to make and can be prepped ahead of time. You can chop all your vegetables at the beginning of the week, and they hold well in the fridge.
When making the dressing for your greek salad , I always make extra to have it handy throughout the week. I love adding chicken for that extra protein, but you can easily have it without.

Grilled Chicken Greek Salad
Greek salad can be made ahead of time and store in the fridge overnight. Making the dressing ahead allows all the flavors to combine so well, it taste so much better when letting sit longer.

Ingredients
- 1 Butter lettuce head
- 2 Japanese cucumbers
- 1/4 cup Red sliced onions
- 2 tbsp Feta cheese light
- 2 tbsp Black olives
- 2 Sliced pepperoncini
- 1/4 cup olive oil
- 1 Lemon juice
- 1 Clove of garlic (minced)
- 2 tbsp vinegar
- 1/2 tsp oregano
- Salt & pepper to tast
- 4 oz Chicken breast
Instructions
- Dressing: In a small bowl add Olive oil, vinegar, 1/2 lemon juice, garlic, oregano, and salt & pepper. Whisk and set aside. Salad: Chop lettuce, cucumbers, peppers, and olives. Thinly slice onions and pepperoncini. In a big salad bowl lay lettuce and add all topping and crumble the feta cheese. Grilled chicken: Heat a medium skillet, season your chicken, with salt, pepper, 1/2 lemon juice, thyme. Grill on both sides.Nutrition facts per serving: 281 cal, 19.6g fat, 14.37g carbs, 17.9g protein
