
When it comes to meals, I love and enjoy simplicity, especially for a busy week. A sandwich is a perfect meal for any picky eater because you can add as much or as little as you want.
Something I love doing when I make my grilled chicken sandwich is grilling extra chicken and making it into different recipes. You can easily make these indoors or outdoors. I personally love making them outdoors, the char from the barbeque grill is my absolute favorite. The cooking procress is faster and the clean-up is so minimal.
I used mozzarella cheese on this recipe, but another option I enjoy as well is colby cheese. You can use pretty much any cheese you love. I don’t think you can go wrong with any option you go with.

- 1 Whole wheat bun
- 3 oz Chicken breast
- 1 Thin slice of mozzarella cheese
- Thin slice of onion
- Romaine lettuce
- Pickles
- 1 tbsp Light mayonnaise

- Directions: Place your chicken breast on a cutting board and with your choice of meat tenderizer you can beat your chicken and even it out. Season with your choice of seasoning.
