Breakfast is my favorite meal of the day. I never go without eating breakfast, even when I am running late. My turkey bacon egg bites are perfect to just grab and go. Many times I warm them up and eat them on my drive to work.

Egg bites are easy and quick to make. This is one of those recipes you can make any way you like and with pretty much any ingredient you enjoy. You can make these ahead of time, and they hold very well in the fridge for 3 days, or you can freeze them. When you are ready to eat them, just microwave them, and you are done.

When you’re a working parent, you want to make sure your kids eat a healthy and delicious breakfast; egg bites are perfect for kids to grab, heat up, and enjoy on their way to school.

My kids love breakfast but have no time to sit and have a decent meal in the morning. My turkey egg bites are just perfect for them and sometimes even their friends.

I have also made these with just egg whites; I usually make both. I like the egg whites with a little extra cheese. As my son would say, it’s never enough cheese.

These egg bites are great for an on-the-go breakfast. They are so easy to make and well kept in the fridge for a few days. What I love about making egg bites is how versatile they are with the ingredients. There are so many ways to make them and enjoyed by the whole family.

Equipment

  • Muffin tin
  • Skillet

Ingredients
  

  • 6 Eggs
  • 4 Turkey Slices
  • 1/3 cup Scallion (chopped)
  • Cheddar Cheese
  • 1 Sweet pepper (small)
  • Milk Splash
  • Salt & pepper to taste

Instructions
 

  • Chop bacon and peppers into small pieces. Heat a medium skillet, add cooking spray and sautee bacon and peppers until bacon is crispy. In a bowl beat your eggs and add salt, pepper, and a splash of milk. The milk will help your eggs be nice and fluffy. Preheat oven to 350. While the oven is heating, spray your muffin tin with cooking spray. Add a little of the bacon mixture to each muffin cup, then add your egg mixture evenly distributed. Top it off with cheese and scallions. Bake for 20 minutes or until the egg is fully cooked. Keep an eye on them you do not want to overcook the eggs.
